my pumpkin creme brulee recipe:
2c heavy cream
2tsp vanilla
8 egg yolks
1/3c sugar
1c pureed pumpkin
1/4tsp cinnamon
1/8tsp nutmeg
1/4tsp ginger
1/4 sugar to caramelize on top (save for the end)
preheat oven to 300…in large bowl, whisk together all the ingredients…strain into another bowl making sure there are no bubbles or foam…divide mixture into ramekins (usually makes about 6, depends on how much you put into the ramekin)…cook in a water bath for about 40 - 50 minutes (45 is usually perfect, but it depends on the oven)…remove from oven and let cool…remove from the water bath and chill for at least two hours.
then once chilled sprinkle about 2tsp of sugar on each and caramelize sugar…i have a small torch to melt the sugar, but you can put it in the oven set to broil…keep an eye on it because the sugar will burn quick if you are not careful…then chill again for a few minutes…and then you can serve it.
i have always wanted to hollow out little pumpkins and serve it in them, but that takes too much effort…enjoy.
